Rhum Agricole is known for its full-bodied and grassy flavour profile, often described as having a herbaceous quality with notes of tropical fruit, spices, and earth. The concept of terroir is highly significant in the production of Rhum Agricole, as the environment - soil type, topography, and climate - affects the quality and taste of the sugarcane and, hence, the final spirit. Each distillery's Rhum Agricole carries the imprint of the land from which its cane was harvested. Martinique has taken the lead in establishing stringent production standards, achieving an Appellation d'Origine Contrôlée (AOC) designation for Martinique Rhum Agricole in 1996. This AOC, much like those for French wines, specifies the types of sugarcane that can be used, the areas of production, the distillation process, and the ageing requirements, ensuring each bottle meets high quality and authenticity standards. As mentioned earlier, they bottle this release at barrel proof. Most of the agricole rums I've tried have been from Clement and I have liked them all to varying degrees. I even managed to snag a bottle of Rhum JM Gold which I liked rather well (rated it an "8"). There’s a rich and heavy fruit aroma coming off the glass here, almost like a very sweet fruitcake — I’m getting some raisins, apricots, deep brown sugar, plums, figs, and a touch of vanilla for good measure. As the liquid settles, there’s a bit of the herbaceous raw sugar cane that peeks through, but it is significantly buried under everything else. It’s less of a tropical assortment than we saw in the VSOP and more of the traditional rancio profile.
